Mug cakes were all the rage last year and the year before and the year before. Their ongoing popularity has meant that recipes have slowly evolved into amazing, single serving cakes to be enjoyed by single-non-bakers. Yup, BakedLawyer is doing a mug cake but this is not the eggy, rubbery mess that usually comes with microwave baking. This is a legit cake, as these pictures illustrate.
What’s even more amazing is that this recipe can become vegan, gluten-free or straight up indulgent as you prefer. The words in brackets indicate the substitutions you can make to make this cake vegan or gluten-free. I’ll also indicate what I personally went with to achieve these results. Ready for a five minute cake? Me too, just try not too make it everyday!
3 tbs nutella (you can use a nut butter instead)
4 tbs milk (dairy, almond, soy…anything you want)
4 tbs oil (I used coconut but any flavorless oil will do)
1 egg (to make it vegan, 1 tsp of flax powder mixed into 4 tbs water)
4 tbs flour (plain, gluten free or even almond/ coconut is great)
2 tsp cocoa powder (if you used nut butter instead of nutella, use 2 tbs of cocoa powder instead)
1/4 tsp baking powder (or just use self raising flour)
2 tsp castor sugar (stevia is also good)
a sizable mug/ microwave safe container
a table spoon
a tea spoon
In your mug, mix the nutella, milk and oil with a fork. If using coconut oil, you will need to microwave it for about 10 – 15 secs so that the oil liquifies. Crack in the egg and mix well.
Add the baking powder, flour, sugar and cocoa powder to the mug and combine.
Place the mug onto a plate and place it in the microwave. Microwave the mix in 30 second increments, checking the consistency of the cake after each interval. Your cake should cook in between 1:30 and 2:30 depending on the wattage of your microwave. If you prefer it to be more like a fondant, use a shorter period of time. You can always stick it in again if you need to.
Note that when it is cooked, the cake will still have a slightly liquid and glossy layer on the top. The inside, should be perfectly cakey.
Top with cream and any berries you’d like. Now enjoy!
