I absolutely love soft pretzels coupled with a little mustard. These pretzels are so simple to make and require very little in the way of ingredients.
If you’re not a fan of pretzels, this dough can be used for pretty much anything and always produces a light, fluffy bread.
Yield: 8 Pretzels
Ingredients
Dough
2 1/2 cups cake flour (2.5 cups)
1/2 tsp salt
1 tbs sugar
2 1/2 tsp instant yeast
1 1/4 cup warm water
Finishings
1/2 cup warm water
1 tbsp baking soda
coarse sea salt, for sprinkling
a little melted butter

Method
Step 1: the Dry Ingredients
In a bowl combine the flour and salt in bowl.
Step 2: the Yeast
In a separate bowl combine the warm water, yeast and sugar. Set aside and allow to react. Once slightly foamy, add to the dry ingredients and begin to mix with a spoon.
Step 3: The Dough
Once the dough has come together, use a dough hook attachment or by hand knead the dough for 5 minutes. The dough should be a smooth ball of dough. Once sufficiently kneaded, cover with a cloth and allow to rise in a warm place for 30 minutes.
Step 4: Rolling
Once the dough has risen, remove it from the bowl and cut into eight pieces. Roll each piece into a long cylinder of dough.
Cross one end across the roll and then loop back through the hole to create a traditional pretzel shape.
Step 5: Preparation
Have your over preheated to 200 degrees celcius.
Mix the baking soda and boiling water in a bowl. Before placing the rolled pretzels on the baking sheet, dip each pretzel into the mixture. Then sprinkle some coarse salt over the pretzels and allow them to proof for 10 minutes.
After proofing, place in the over and allow to bake for about 10 minutes until golden brown. Immediately after baking the pretzels, brush them with melted butter and serve.
